Recently I took a Thai cooking class and one of the dishes was a green curry. We learned how to smash the curry ingredients in a mortor with a pestle. Later I found curry pasts for all kinds of different Thai and southeast curries. Much easier to handle if you don't use too much. Curries are still one of my favorite.
